Warm Lemon Sauce

A delicious sauce that we use with several recipes. It's rich, succulent, and great with a variety of dishes. It goes great with grilled or roasted meats and poultry, and goes with just about any vegetable.

Ingredients
- 1 1/2 cups vegetable or chicken stock
- 1/2 cup dry white wine
- 3 egg yolks
- 5 tablespoons fresh lemon juice
- 1 teaspoon Kosher salt
- 1 teaspoon black peppercorns (freshly ground)
- 2 tablespoons fresh chives (minced)
- 2 tablespoons fresh rosemary (chopped)
Instructions
- In a small saucepan, over medium heat, bring the stock and wine to a boil.
- Reduce by half.
- In a medium-sized mixing bowl, whisk together the egg yolks and lemon juice.
- Slowly, whisk the reduced stock into the egg mixture, a little a time so you don't cook the eggs.
- Return the mixture to the saucepan and place back on the stove.
- Cook the sauce, stirring continuously until the sauce thickens slightly (only a couple minutes).
- Strain immediately and season with the salt and pepper to taste (you may not use it all).
- Stir in the chives and rosemary.
- Keep warm until ready to serve.
